A sweet treat you can enjoy with a cup of tea.
3 cups self-raising flour
1 tsp baking soda
50g margarine, cold & chopped
1.5 cups buttermilk
1 cup chopped dates
- Preheat oven to 180ºC. In a bowl, sift flour and baking soda and add chopped margarine. Using your hands, work the margarine into the flour ensuring that it does not melt. Flour should resemble breadcrumbs.
- Add the buttermilk and dates. Using a knife, mix buttermilk into the flour. Keep the mixture fairly wet. On a floured surface, turn out dough. Pat down gently to approximately 2.5 centimetres thick – do not knead or overwork. Using a 6cm cookie cutter, cut dough into rounds and place on a baking paper-lined tray. Alternatively, for a more rustic scone, using a knife and chop dough into portions.
- Bake for 10-15 minutes or until scones are golden on the outside.
